Tomato and Thyme Tart

Ingredients

For the pastry:

  • 150g bread and pastry Mix
  •  1 pinch of salt
  • 50ml olive oil
  • 100ml water
  • 3 sprigs of thyme

 

For the filling:

  • 130g tomato purée
  • 10g egg substitute
  • 100ml water
  • 3 tomatoes
  • A little parsley

Preparation

  1. Add the salt to the Bread and pastry Mix.
  2. Crumble the thyme and combine into the mixture.
  3. Add the water and olive oil in one go.
  4. Mix until a uniforme dough is obtained.
  5. Roll out the dough and cut it into whatever shaped biscuits you like.
  6. Prepare the tomato purée.
  7. Add the egg substitute and then the water.
  8. Spread this smooth mixture over the pastry base.
  9. Cut the tomatoes into thin slices and arrange them over the top. Bake for 25 minutes at 180°C (gas mark 6).
