Makis with rice substitute and raw vegetables

Ingredients
- 200g of Taranis rice substitute
- 500ml of water
- 60g courgettes
- 80g carrots
- 110g cucumbers
- 4 tablespoons of rice vinegar
Preparation
- Cook the rice substitute in 500 ml of boiling water for 8 minutes, then rinse with cold water.
- Peel the courgettes, 1 slice in 2, leaving some skin on. Cut thin slices of courgettes with a large peeler, then plunge them in boiling water for 1 minute and set them aside on absorbent paper.
- Peel the carrots and cucumber and cut into sticks.
- Mix the rice with the vinegar and sugar, and chill for 30 minutes.
- Place 2 thin slices of courgette on the work surface, add rice along the length of the slice and raw vegetable sticks in the middle. Roll up the courgette tightly and leave in the fridge for at least 1 hour.
